 Cabbage & Apple Slaw
A Delicious Side Dish, great for Diabetics.

Ingredients:
• 1/4 cup white and 1/4 cup purple cabbage, quartered, cored and shredded
• 1 apple , cored and grated
• 2 carrots, cut into matchsticks
• 1⁄2 red onion, finely sliced
• 1 cup fat-free Greek yogurt
• juice 1⁄2 lemon
• 2 tsp cider vinegar
• 2 tsp Dijon mustard
Directions:
Mix the cabbage, apple, carrots and onion in a large bowl. In a separate bowl, mix the yogurt and lemon juice, vinegar and mustard. Season, then pour over the vegetables. Give everything a good stir to coat in the dressing and eat immediately, or chill until you are ready to serve.
