   Cauliflower Pizza

• 2 1/2 cups grated cauliflower
• 1 large egg, lightly beaten
• 1 1/4 cups shredded mozzarella
cheese
• 2 tablespoons grated parmesan
cheese, sea salt and black pepper • 1/4 cup tomato sauce
• 1 cup grape tomatoes, sliced in
half (optional)
• 2 cloves garlic, sliced or minced,
your choice
Directions
1. Line baking sheet with parchment paper.
2. Preheat oven to 425 degrees F.
3. Grate the cauliflower until you have two cups of cauliflower
crumbles. Place in large bowl and microwave for seven to
eight minutes, or until soft.
4. Remove from the microwave and place onto doubled up
paper towels, let cool.
5. Once the cauliflower is cool enough to touch with your hands,
squeeze out all the liquid with the paper towels. (This step is important because if the cauliflower is too moist the dough will come out chewy, not crisp like pizza crust.)
6. Mix the egg, one cup mozzarella, Parmesan cheese, and salt and pepper.
7. Once combined, pat into a 10-inch round on the pan (doesn't have to be perfect).
8. Bake for 10-15mins, or until golden.
9. Top the pizza with the tomato pizza sauce, 1/4 cup mozzarella
and garlic and bake in the oven until melted and bubbly
(another 10mins).
10.Top with fresh slices of baby tomatoes and put back in the
oven for 1-2 mins
Toppings can be altered to personal preference.
Let cool before serving and Enjoy!
